Easiest weeknight dinner ever. My mother makes this religiously and I’ve never tried it in my own until now.
Of course, when you ask someone to tell you how they make something they’ve been making for years, you sometimes get the “I don’t measure” answer so you’re left on your own to figure it out.
Nonetheless, my version turned out just as tasty as her version and in my second batch I used no oil, so this is a no oil recipe too.
It can't get any easier than this.

1 pack frozen spinach (10 oz)
2 tbsp garlic minced
1/2 cup onions chopped
1 tsp salt
1/3 cup coconut milk (I used full fat)
Sauté onions and garlic until fragrant.
Add spinach and cover for a few minutes until thawed out slightly.
Stir in coconut milk and add salt.
Cook for another 5 minutes.
