I've been trying to make this meal for what seems like forever. Not sure what took me so long. The yellow split peas were easy to cook despite the fact that I didn't soak them which was a plus.
It's another quick rice dish that doesn't require too many ingredients. In fact, it only requires 6 ingredients and one pot and about 30 minutes from start to finish.
Rice and peas are a staple for generations of my family, everyone knows how to make it. Even my teenage son swears he knows how to make it just from watching his grandmother make it so many times. It fills you up, can last for maybe two days for a family of three and is healthy.
It's usually not made with spinach but I decided to add it in simply because I had left over spinach that wasn't enough to make a meal out of but just enough for this so that it didn't over power the whole meal. It worked out quite well I think.
To avoid having mushy peas or under cooked peas, they have to be watched or rather tested a bit to make sure they're ready. The texture should be soft enough to mach against the inside of the pot but not smashed completely. You can also just grab a few and taste them to make sure they're cooked. To help speed up the cooking process, you can soak the split peas overnight and have them ready but I didn't plan to make this meal so I used the dry peas.
Of course, having the peas doesn't necessarily mean it' doesn't taste good, it still does the rice mixture will just be slightly mushy.

Split Pea Rice and Spinach
Makes: 6 Cups
- 1 cup long grain brown rice
- 5 cups water
- 1/2 cup yellow split Peas
- 1/2 cup coconut milk
- 3 cloves garlic or minced garlic
- 1/2 chopped onion
- 2 cups chopped spinach
- Bring a large stock pot with water and bring to boil.
- Add Split Peas and let cook until half way cooked. About 20 minutes.
- Add rice, coconut milk, onion, and garlic.
- Cook on low to medium heat for another 10-15 minutes until rice is cooked.
- Stir in Spinach once rice is cooked and let simmer for another 2 minutes.
