I have been trying to perfect vegan pizza for weeks and I've had a couple failed attempts that my kids lovingly eat anyway...poor things. This time, I think I have gotten extremely close. I made a version of this pizza with regular pizza dough yesterday and it came out so good that today I decided to recreate it with flour tortillas.
It was the closest thing to pepperoni pizza for my tastebuds.
When I decided to make this yesterday I realized that my pizza sauce had gone bad and decided to just use some organic spaghetti sauce I had on hand. It still turned out great, I'm wondering now if I should even buy pizza sauce anymore, this sauce was much better.
My toppings included pineapples, calamatta olives(my first time trying these), vegan mozzarella cheese(TJ), tiny bits of chopped red onions, and the spaghetti sauce. Absolutely delicious in my opinion.
The version below had some added green peppers.
I went light on the cheese because the tortilla gets very heavy and soggy with too much cheese even on the regular pizza dough as well. Maybe vegan-ized pizza does not require the same level of cheese like regular pizza?
Vegan Tortilla Pizza
- Flour tortillas
- Marinara sauce
- Vegan Mozzarella shreds
- Kalamatta olives chopped
- Green peppers chopped
- Pineapples slices chopped
- Place marinara sauce on flour tortilla.
- Add mozzarella, peppers, olives, and pineapples
- Place in broiler for 5 minutes, carefully watching to prevent burning it.
